Ingredients

4 boneless pork chops

1 tbsp olive oil

1 tbsp butter
-
1 small onion, diced

3 cups sliced mushrooms

3 cloves garlic, minced

1 cup heavy cream
-
½ cup chicken broth
-
1 tsp Dijon mustard
-
1 tsp Italian seasoning
-
½ tsp paprika
-
½ tsp salt (to taste)

½ tsp black pepper

2 cups fresh spinach

¼ cup grated Parmesan cheese

Fresh parsley for garnish
Instructions

Season pork chops with salt, pepper, and paprika.

Heat olive oil and butter in a skillet over medium-high heat.

Sear pork chops 3–4 minutes per side until golden brown. Remove and set aside.

In the same skillet, sauté onions and mushrooms until tender (about 5 minutes).

Add garlic and cook one minute.

Stir in heavy cream, chicken broth, Dijon mustard, Italian seasoning, and Parmesan.

Bring sauce to a simmer, then return pork chops to the pan.

Simmer 8–10 minutes, until sauce thickens and pork reaches 145°F (63°C) internally.

Add fresh spinach and let it wilt into the sauce.

Garnish with parsley and serve over mashed potatoes, rice, or pasta.
