Creamy Mushroom Pork Chops with Spinach

Ingredients

  • 4 boneless pork chops

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1 small onion, diced

  • 3 cups sliced mushrooms

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup chicken broth

  • 1 tsp Dijon mustard

  • 1 tsp Italian seasoning

  • ½ tsp paprika

  • ½ tsp salt (to taste)

  • ½ tsp black pepper

  • 2 cups fresh spinach

  • ¼ cup grated Parmesan cheese

  • Fresh parsley for garnish


Instructions

  1. Season pork chops with salt, pepper, and paprika.

  2. Heat olive oil and butter in a skillet over medium-high heat.

  3. Sear pork chops 3–4 minutes per side until golden brown. Remove and set aside.

  4. In the same skillet, sauté onions and mushrooms until tender (about 5 minutes).

  5. Add garlic and cook one minute.

  6. Stir in heavy cream, chicken broth, Dijon mustard, Italian seasoning, and Parmesan.

  7. Bring sauce to a simmer, then return pork chops to the pan.

  8. Simmer 8–10 minutes, until sauce thickens and pork reaches 145°F (63°C) internally.

  9. Add fresh spinach and let it wilt into the sauce.

  10. Garnish with parsley and serve over mashed potatoes, rice, or pasta.
