Creamy Salmon Pasta with Spinach

Ingredients:

  • 8 oz pasta (fettuccine, penne, or your choice)

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 small onion, finely diced

  • 1 lb salmon fillets, skin removed

  • Salt & pepper, to taste

  • 1 tsp paprika (optional)

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • 2 cups fresh spinach

  • 1 tbsp lemon juice

  • Fresh parsley, chopped (for garnish)


Instructions:

  1. Cook pasta: Boil pasta according to package directions. Drain and set aside, reserving ½ cup pasta water.

  2. Cook salmon: Season salmon with salt, pepper, and paprika. In a skillet, heat olive oil over medium heat. Cook salmon 3–4 minutes per side until just cooked through. Remove from skillet and flake into large pieces.

  3. Sauté aromatics: In the same skillet, add onion and garlic. Sauté until translucent and fragrant, about 2–3 minutes.

  4. Make sauce: Add heavy cream and bring to a gentle simmer. Stir in Parmesan until melted and creamy. Adjust consistency with reserved pasta water if needed.

  5. Add spinach & pasta: Stir in fresh spinach until wilted, then add cooked pasta and flaked salmon. Toss gently to coat everything in the creamy sauce.

  6. Finish: Add lemon juice and adjust salt & pepper to taste.

  7. Serve: Plate and garnish with chopped parsley and extra Parmesan if desired.
