Creamy Spinach and Artichoke Chicken Casserole

Ingredients:

  • 2 cups cooked chicken breast, shredded or diced

  • 1 (10 oz) package frozen chopped spinach, thawed and well-drained

  • 1 (14 oz) can artichoke hearts, drained and chopped

  • 1 (8 oz) block cream cheese, softened

  • ½ cup sour cream

  • ½ cup mayonnaise

  • 1 teaspoon garlic powder

  • ½ teaspoon onion powder

  • ½ teaspoon black pepper

  • 1 cup shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • ½ cup shredded mozzarella or cheddar (for topping)

Instructions:

  1. Preheat Oven:
    Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

  2. Prepare the Creamy Mixture:
    In a large mixing bowl, combine softened cream cheese, sour cream, mayonnaise, garlic powder, onion powder, and black pepper. Stir until smooth.

  3. Add the Fillings:
    Fold in cooked chicken, spinach, chopped artichokes, mozzarella, and Parmesan until evenly mixed.

  4. Assemble and Bake:
    Spread the mixture evenly in the prepared baking dish. Top with the remaining ½ cup of mozzarella or cheddar cheese.

  5. Bake:
    Bake for 25–30 minutes, or until hot, bubbly, and golden on top.

  6. Serve:
    Remove from oven, let cool slightly, and serve warm with garlic bread, pasta, or a fresh salad.
