Creamy Spinach Mushroom Pork Chops

 Ingredients:

  • 4 thick-cut pork chops (bone-in or boneless)

  • Salt and black pepper, to taste

  • 1 tsp paprika

  • 2 tbsp olive oil

  • 3 tbsp butter

  • 8 oz mushrooms, sliced

  • 4 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup chicken broth

  • 1 tsp Dijon mustard (optional, for depth)

  • 1 tsp Italian seasoning

  • 2 cups fresh baby spinach

  • ½ cup grated Parmesan cheese

  • Fresh parsley, chopped (for garnish)

 Instructions:

  1. Season and sear the pork chops:
    Pat pork chops dry, then season both sides with salt, pepper, and paprika.
    Heat olive oil in a large skillet over medium-high heat. Sear chops 3–4 minutes per side until golden brown. Remove and set aside.

  2. Sauté the mushrooms and garlic:
    In the same pan, add butter and sliced mushrooms. Cook 4–5 minutes until tender and golden.
    Stir in minced garlic and cook for 30 seconds until fragrant.

  3. Make the creamy sauce:
    Pour in chicken broth, heavy cream, Dijon mustard, and Italian seasoning. Stir and bring to a gentle simmer.

  4. Add spinach and cheese:
    Add spinach and let it wilt into the sauce. Stir in Parmesan until melted and smooth.

  5. Combine and simmer:
    Return pork chops to the pan, spooning sauce over the top.
    Simmer uncovered for 5–7 minutes, until the sauce thickens and pork chops are cooked through.

  6. Garnish and serve:
    Sprinkle with fresh parsley and extra Parmesan before serving.
