Creamy Spinach Mushroom Pork Chops
Ingredients:

4 thick-cut pork chops (bone-in or boneless)

Salt and black pepper, to taste

1 tsp paprika

2 tbsp olive oil
-
3 tbsp butter
-
8 oz mushrooms, sliced
-
4 cloves garlic, minced
-
1 cup heavy cream
-
½ cup chicken broth
-
1 tsp Dijon mustard (optional, for depth)

1 tsp Italian seasoning
-
2 cups fresh baby spinach
-
½ cup grated Parmesan cheese
-
Fresh parsley, chopped (for garnish)
Instructions:

Season and sear the pork chops:
Pat pork chops dry, then season both sides with salt, pepper, and paprika.
Heat olive oil in a large skillet over medium-high heat. Sear chops 3–4 minutes per side until golden brown. Remove and set aside. -
Sauté the mushrooms and garlic:
In the same pan, add butter and sliced mushrooms. Cook 4–5 minutes until tender and golden.
Stir in minced garlic and cook for 30 seconds until fragrant. -
Make the creamy sauce:
Pour in chicken broth, heavy cream, Dijon mustard, and Italian seasoning. Stir and bring to a gentle simmer. -
Add spinach and cheese:
Add spinach and let it wilt into the sauce. Stir in Parmesan until melted and smooth. -
Combine and simmer:
Return pork chops to the pan, spooning sauce over the top.
Simmer uncovered for 5–7 minutes, until the sauce thickens and pork chops are cooked through. -
Garnish and serve:
Sprinkle with fresh parsley and extra Parmesan before serving.
