Creamy Tarragon Chicken with Mushrooms
Ingredients
For the Chicken:

4 boneless, skinless chicken breasts

1/2 tablespoon plain flour

Salt and freshly ground black pepper to taste

2 tablespoons butter

1 tablespoon olive oil
For the Sauce:

2 shallots, finely diced (or 1 small onion)
-
3-4 garlic cloves, minced
-
8-10 ounces mushrooms, sliced (cremini, button, or shiitake)

3/4 cup chicken stock
-
1 cup heavy cream
-
2 teaspoons Dijon mustard
-
2 tablespoons fresh tarragon, finely chopped

Additional fresh tarragon for garnish
Instructions
Prepare the Chicken:

Season chicken breasts with salt and pepper, then lightly dust with flour on both sides

If chicken breasts are thick, butterfly them for even cooking

Heat butter and olive oil in a large skillet over medium heat

Brown chicken for 2-3 minutes per side until golden but not fully cooked through

Remove chicken and set aside
Make the Sauce:

Add shallots to the same pan with a bit more butter if needed

Sauté over low heat until softened, about 3-4 minutes

Add minced garlic and cook for 30 seconds until fragrant

Add sliced mushrooms and cook for about 5 minutes until softened

Stir in Dijon mustard and chopped tarragon

Pour in chicken stock and bring to a simmer
Finish the Dish:

Return chicken to the pan, cover and cook for 15-20 minutes until chicken is cooked through

Stir in heavy cream and cook until warmed through and slightly thickened

Taste and adjust seasoning with salt and pepper

Garnish with fresh tarragon before serving
