Creamy Tuscan Chicken Gnocchi Skillet
Ingredients

1 lb chicken breasts, thinly sliced

1 tbsp olive oil

1 tbsp butter

Salt and black pepper, to taste

1 tsp garlic powder

1 tsp Italian seasoning
-
3 garlic cloves, minced

1 cup sun-dried tomatoes, sliced

2 cups baby spinach
-
1 cup heavy cream
-
1 cup chicken broth
-
½ cup grated Parmesan cheese

1 lb potato gnocchi (shelf-stable or refrigerated)

Fresh basil for garnish
Instructions

Season sliced chicken with salt, pepper, garlic powder, and Italian seasoning.

Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and cook until golden and cooked through. Remove and set aside.

Add garlic and sun-dried tomatoes to the same skillet; sauté for 1 minute.

Pour in heavy cream, chicken broth, and Parmesan. Stir and bring to a gentle simmer.

Add the uncooked gnocchi directly into the skillet. Stir, cover, and cook for 5–7 minutes until the gnocchi becomes soft and the sauce thickens.

Add spinach and stir until wilted. Return chicken to the skillet and simmer 2–3 more minutes.

Garnish with fresh basil and serve hot.
