Creamy Tuscan Pasta

Ingredients

  • 12 oz pasta (penne, rotini, or fettuccine)

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 cup cherry tomatoes, halved

  • 1 cup heavy cream

  • 1 cup chicken broth

  • ½ cup grated Parmesan

  • 1 tsp Italian seasoning

  • ½ tsp chili flakes (optional)

  • 1 cup spinach

  • ½ cup sun-dried tomatoes, chopped

  • Salt & pepper to taste

  • 2 tbsp butter


Instructions

  1. Cook pasta:
    Boil pasta according to package instructions. Drain and set aside.

  2. Sauté garlic + tomatoes:
    In a large skillet, heat olive oil. Add garlic and cherry tomatoes. Cook until fragrant and tomatoes soften.

  3. Make the sauce:
    Add butter, heavy cream, chicken broth, Parmesan, Italian seasoning, chili flakes, salt, and pepper.
    Simmer 3–4 minutes until creamy.

  4. Add spinach + sun-dried tomatoes:
    Stir in spinach and sun-dried tomatoes. Cook until spinach wilts.

  5. Combine:
    Add the cooked pasta and toss until fully coated in the creamy Tuscan sauce.

  6. Serve:
    Garnish with extra Parmesan and cracked black pepper.
