Creamy Tuscan Salmon Skillet

Servings: 4 | Prep Time: 10 min | Cook Time: 20 min | Calories: ~480 per serving

Ingredients:

  • 4 salmon fillets (6 oz each), skinless

  • Salt and pepper, to taste

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 small onion, finely chopped

  • 1 cup cherry tomatoes, halved

  • 2 cups fresh spinach

  • ½ cup sun-dried tomatoes, chopped

  • 1 tsp Italian seasoning

  • ¾ cup heavy cream

  • ¼ cup grated Parmesan cheese

  • 1 tbsp lemon juice

  • Fresh parsley, chopped, for garnish

Instructions:

  1. Season and sear salmon: Season salmon fillets with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear salmon 3–4 minutes per side until golden and almost cooked through. Remove salmon and set aside.

  2. Make the sauce: In the same skillet, add onion and garlic; sauté until fragrant, about 2–3 minutes. Add cherry tomatoes, sun-dried tomatoes, and Italian seasoning; cook 2 minutes.

  3. Add cream and spinach: Stir in heavy cream and Parmesan, then add spinach. Cook until spinach wilts and sauce thickens slightly, 3–4 minutes.

  4. Finish the dish: Return salmon to skillet, spooning sauce over fillets. Drizzle with lemon juice and simmer 2–3 minutes until salmon is cooked through.

  5. Serve: Garnish with parsley and serve over rice, pasta, or with crusty bread to soak up the creamy Tuscan sauce.
