Creamy Tuscan Salmon Skillet

Ingredients:

4 salmon fillets (6 oz each), skinless

Salt and pepper, to taste

2 tbsp olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 cup cherry tomatoes, halved

2 cups fresh spinach

½ cup sun-dried tomatoes, chopped

1 tsp Italian seasoning

¾ cup heavy cream
-
¼ cup grated Parmesan cheese

1 tbsp lemon juice

Fresh parsley, chopped, for garnish
Instructions:

Season and sear salmon: Season salmon fillets with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear salmon 3–4 minutes per side until golden and almost cooked through. Remove salmon and set aside.

Make the sauce: In the same skillet, add onion and garlic; sauté until fragrant, about 2–3 minutes. Add cherry tomatoes, sun-dried tomatoes, and Italian seasoning; cook 2 minutes.

Add cream and spinach: Stir in heavy cream and Parmesan, then add spinach. Cook until spinach wilts and sauce thickens slightly, 3–4 minutes.

Finish the dish: Return salmon to skillet, spooning sauce over fillets. Drizzle with lemon juice and simmer 2–3 minutes until salmon is cooked through.

Serve: Garnish with parsley and serve over rice, pasta, or with crusty bread to soak up the creamy Tuscan sauce.
