Creamy Tuscan Sun-Dried Tomato Chicken Skillet

Ingredients (Serves 4)

For the Chicken

  • 4 boneless skinless chicken breasts

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp Italian seasoning

  • 2 tbsp olive oil (use the oil from the sun-dried tomato jar if possible)

Sauce

  • 3 tbsp butter

  • 4 cloves garlic, minced

  • 1 cup heavy cream

  • 1 cup chicken broth

  • ½ cup grated parmesan cheese

  • ½ cup sun-dried tomatoes, chopped

  • 1 tsp paprika

  • 1 tsp Italian seasoning

  • 2 cups fresh spinach

  • Salt & pepper to taste

  • Optional: pinch of crushed red pepper for heat


Instructions

1. Prepare the Chicken

  1. Pat the chicken dry and season both sides with salt, pepper, and Italian seasoning.

  2. Heat olive oil in a large skillet over medium-high heat.

  3. Sear chicken for 5–6 minutes per side until golden. Remove and set aside.

2. Make the Creamy Tuscan Sauce

  1. In the same skillet, add butter and garlic. Cook 30 seconds until fragrant.

  2. Stir in heavy cream, chicken broth, parmesan, paprika, and Italian seasoning.

  3. Add sun-dried tomatoes and simmer for 3–4 minutes until slightly thickened.

3. Add Spinach & Finish

  1. Add spinach and stir until wilted.

  2. Return chicken to the pan, spoon sauce over the top, and simmer 5–7 minutes until chicken is cooked through and sauce is creamy.

  3. Taste and add salt/pepper as needed.


Serving Ideas

  • Serve over mashed potatoes, pasta, rice, or crusty bread.

  • Garnish with fresh basil or more parmesan for extra richness.
