1 lb ground chicken

2 tbsp sesame oil

3 cloves garlic, minced

1 tbsp fresh ginger, grated

1/4 cup soy sauce (or tamari for gluten-free)

2 tbsp hoisin sauce

1 tbsp rice vinegar

1 tsp sriracha or chili paste (optional)

2 green onions, thinly sliced

1/4 cup water chestnuts, finely chopped

1 tbsp sesame seeds, toasted

8-12 large butter or romaine lettuce leaves

Salt and pepper to taste
Instructions:

Cook the chicken:

Heat sesame oil in a large skillet over medium-high heat.

Add garlic and ginger, sauté 1 minute until fragrant.

Add ground chicken, season with salt and pepper, and cook until browned and crispy, about 6-8 minutes.

Add flavorings:

Stir in soy sauce, hoisin sauce, rice vinegar, and sriracha (if using).

Mix in chopped water chestnuts and green onions. Cook 2-3 minutes until everything is heated through.
