Crock Pot Chicken Parmesan

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 teaspoon garlic powder

  • 1 teaspoon Italian seasoning

  • 1 jar (24 oz) marinara sauce

  • 1 cup shredded mozzarella cheese

  • 1/2 cup grated Parmesan cheese

  • 1 cup seasoned breadcrumbs

  • 2 tablespoons olive oil or melted butter

  • Fresh basil or parsley, for garnish

  • Cooked spaghetti or linguine, for serving


Instructions:

  1. Prepare the chicken:
    Pat chicken breasts dry. Season both sides with salt, pepper, garlic powder, and Italian seasoning.

  2. Layer in the slow cooker:
    Spread a thin layer of marinara sauce on the bottom of the Crock Pot.
    Place chicken breasts on top in a single layer.

  3. Add sauce:
    Pour the remaining marinara sauce evenly over the chicken.

  4. Cook:
    Cover and cook on LOW for 5–6 hours or HIGH for 2.5–3 hours, until the chicken is tender and cooked through.

  5. Add the cheese topping:
    In a small bowl, mix breadcrumbs with olive oil or melted butter.
    Sprinkle mozzarella and Parmesan cheese over the chicken, then top with the breadcrumb mixture.

  6. Melt and crisp:
    Cover again and cook for another 15–20 minutes, just until the cheese melts.
    (Optional: transfer to a baking dish and broil for 2–3 minutes to make the topping golden and crispy.)

  7. Serve:
    Spoon the saucy, cheesy chicken over cooked pasta and garnish with fresh basil or parsley.
