Crock Pot Garlic Butter Chicken Thighs

Ingredients

  • 6–8 bone-in, skinless chicken thighs

  • Salt and black pepper, to taste

  • 4 tbsp unsalted butter, melted

  • 4 cloves garlic, minced

  • 1 tsp paprika

  • 1 tsp dried thyme or Italian seasoning

  • ½ tsp onion powder

  • ½ cup chicken broth

  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Prepare the Chicken:
    Pat chicken thighs dry and season generously with salt, pepper, paprika, and onion powder.

  2. Make Garlic Butter:
    In a small bowl, mix melted butter, minced garlic, and dried thyme (or Italian seasoning).

  3. Assemble in Crock Pot:
    Place chicken thighs in the crock pot. Pour the garlic butter mixture evenly over the chicken.
    Add chicken broth around the edges (not over the chicken to keep the butter coating intact).

  4. Slow Cook:
    Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender and cooked through (internal temp 165°F / 74°C).

  5. Serve:
    Spoon the garlic butter sauce from the crock pot over the chicken. Garnish with fresh parsley.
    Serve with mashed potatoes, rice, or roasted veggies for a comforting meal.
