Crock Pot Maple Dijon Pork Loin
Ingredients:

2–3 lb pork loin

Salt and black pepper, to taste

2 tablespoons olive oil
-
½ cup maple syrup
-
¼ cup Dijon mustard
-
2 tablespoons apple cider vinegar
-
2 cloves garlic, minced
-
1 teaspoon dried thyme
-
½ teaspoon smoked paprika (optional)
Instructions:

Season and sear the pork:
Pat the pork loin dry and season with salt and pepper.
In a skillet over medium-high heat, sear the pork on all sides for 2–3 minutes to lock in flavor. -
Prepare the sauce:
In a bowl, whisk together maple syrup, Dijon mustard, apple cider vinegar, minced garlic, thyme, and smoked paprika. -
Add to the crock pot:
Place the pork loin in the slow cooker and pour the maple Dijon sauce over it. -
Slow cook:
Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the pork is tender and easily shredded or sliced. -
Serve:
Slice the pork loin and spoon extra sauce over the top.
