Crock Pot Sweet Honey Chicken

Ingredients:

  • 2 lbs boneless, skinless chicken breasts (or thighs)

  • ½ cup honey

  • ¼ cup low-sodium soy sauce

  • ¼ cup ketchup

  • 2 tablespoons brown sugar

  • 2 tablespoons rice vinegar (or apple cider vinegar)

  • 1 teaspoon sesame oil (optional for flavor)

  • 3 cloves garlic, minced

  • ½ teaspoon ground ginger

  • ¼ teaspoon black pepper

  • 2 teaspoons cornstarch + 2 teaspoons water (optional, for thickening)

  • Sesame seeds and sliced green onions, for garnish


Instructions:

  1. Prepare the sauce:
    In a medium bowl, whisk together honey, soy sauce, ketchup, brown sugar, vinegar, sesame oil, garlic, ginger, and black pepper.

  2. Add to the crock pot:
    Place the chicken in the slow cooker and pour the honey sauce over it, coating evenly.

  3. Slow cook:
    Cover and cook on Low for 5–6 hours or High for 2½–3 hours, until the chicken is tender and cooked through.

  4. Thicken the sauce (optional):
    Remove the chicken and whisk in the cornstarch slurry to the sauce. Cook on High for about 10 minutes, until the sauce thickens. Return the chicken and toss to coat.

  5. Serve:
    Sprinkle with sesame seeds and green onions. Serve hot over steamed rice, noodles, or with roasted vegetables.
