Crock Pot Sweet Honey Chicken
Ingredients:

2 lbs boneless, skinless chicken breasts (or thighs)

½ cup honey
-
¼ cup low-sodium soy sauce
-
¼ cup ketchup
-
2 tablespoons brown sugar
-
2 tablespoons rice vinegar (or apple cider vinegar)
-
1 teaspoon sesame oil (optional for flavor)

3 cloves garlic, minced
-
½ teaspoon ground ginger
-
¼ teaspoon black pepper
-
2 teaspoons cornstarch + 2 teaspoons water (optional, for thickening)

Sesame seeds and sliced green onions, for garnish
Instructions:

Prepare the sauce:
In a medium bowl, whisk together honey, soy sauce, ketchup, brown sugar, vinegar, sesame oil, garlic, ginger, and black pepper. -
Add to the crock pot:
Place the chicken in the slow cooker and pour the honey sauce over it, coating evenly. -
Slow cook:
Cover and cook on Low for 5–6 hours or High for 2½–3 hours, until the chicken is tender and cooked through. -
Thicken the sauce (optional):
Remove the chicken and whisk in the cornstarch slurry to the sauce. Cook on High for about 10 minutes, until the sauce thickens. Return the chicken and toss to coat. -
Serve:
Sprinkle with sesame seeds and green onions. Serve hot over steamed rice, noodles, or with roasted vegetables.
