🥢 Crunchy Grilled Sesame Chicken Salad
Ingredients (4 servings):
For the chicken:

2 chicken breasts

2 tbsp soy sauce
-
1 tbsp sesame oil
-
1 tbsp honey
-
1 clove garlic, minced
-
1 tsp fresh ginger, grated
-
1 tsp rice vinegar
-
1 tbsp sesame seeds
For the salad:
-
6 cups mixed greens (romaine, napa cabbage, or a blend)

1 cup shredded carrots
-
1 red bell pepper, thinly sliced
-
1 cup cucumber, sliced
-
1 cup purple cabbage, shredded
-
½ cup edamame (shelled, cooked)
-
½ cup crispy wonton strips (or crunchy chow mein noodles)

2 green onions, sliced
-
Extra sesame seeds, for garnish
For the sesame-ginger dressing:

¼ cup rice vinegar
-
2 tbsp soy sauce
-
1 tbsp sesame oil
-
2 tbsp olive oil
-
1 tbsp honey (or maple syrup)
-
1 clove garlic, minced
-
1 tsp grated ginger
-
Salt & pepper, to taste
Instructions:

Marinate chicken: Whisk soy sauce, sesame oil, honey, garlic, ginger, and rice vinegar. Coat chicken and marinate 20–30 minutes.

Grill chicken: Heat grill (or grill pan) to medium-high. Cook chicken 5–6 minutes per side until cooked through (165°F/74°C). Rest, then slice thinly. Sprinkle with sesame seeds.

Assemble salad: In a large bowl or platter, layer greens, carrots, bell pepper, cucumber, cabbage, edamame, and green onions.

Add chicken & crunch: Top with sliced grilled chicken, wonton strips, and extra sesame seeds.

Make dressing: Whisk rice vinegar, soy sauce, sesame oil, olive oil, honey, garlic, ginger, salt, and pepper.

Serve: Drizzle dressing over salad before serving, or keep on the side.
