🥢 Crunchy Grilled Sesame Chicken Salad

Ingredients (4 servings):

For the chicken:

  • 2 chicken breasts

  • 2 tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 tbsp honey

  • 1 clove garlic, minced

  • 1 tsp fresh ginger, grated

  • 1 tsp rice vinegar

  • 1 tbsp sesame seeds

For the salad:

  • 6 cups mixed greens (romaine, napa cabbage, or a blend)

  • 1 cup shredded carrots

  • 1 red bell pepper, thinly sliced

  • 1 cup cucumber, sliced

  • 1 cup purple cabbage, shredded

  • ½ cup edamame (shelled, cooked)

  • ½ cup crispy wonton strips (or crunchy chow mein noodles)

  • 2 green onions, sliced

  • Extra sesame seeds, for garnish

For the sesame-ginger dressing:

  • ¼ cup rice vinegar

  • 2 tbsp soy sauce

  • 1 tbsp sesame oil

  • 2 tbsp olive oil

  • 1 tbsp honey (or maple syrup)

  • 1 clove garlic, minced

  • 1 tsp grated ginger

  • Salt & pepper, to taste


Instructions:

  1. Marinate chicken: Whisk soy sauce, sesame oil, honey, garlic, ginger, and rice vinegar. Coat chicken and marinate 20–30 minutes.

  2. Grill chicken: Heat grill (or grill pan) to medium-high. Cook chicken 5–6 minutes per side until cooked through (165°F/74°C). Rest, then slice thinly. Sprinkle with sesame seeds.

  3. Assemble salad: In a large bowl or platter, layer greens, carrots, bell pepper, cucumber, cabbage, edamame, and green onions.

  4. Add chicken & crunch: Top with sliced grilled chicken, wonton strips, and extra sesame seeds.

  5. Make dressing: Whisk rice vinegar, soy sauce, sesame oil, olive oil, honey, garlic, ginger, salt, and pepper.

  6. Serve: Drizzle dressing over salad before serving, or keep on the side.
