Easy Pork Carnitas

Ingredients:

  • 3–4 lbs pork shoulder (pork butt), cut into large chunks

  • 1 tablespoon olive oil

  • 1 onion, chopped

  • 4 cloves garlic, minced

  • 1 cup orange juice (fresh if possible)

  • ½ cup lime juice

  • 1 cup chicken broth

  • 1 tablespoon chili powder

  • 2 teaspoons cumin

  • 2 teaspoons oregano

  • 1 teaspoon smoked paprika

  • 2 teaspoons salt

  • 1 teaspoon black pepper

  • 2 bay leaves


Instructions:

Slow Cooker Method (Easiest):

  1. Place pork chunks in slow cooker.

  2. Add onion, garlic, orange juice, lime juice, chicken broth, and all seasonings.

  3. Cover and cook on low 8 hours or high 4–5 hours, until pork is fall-apart tender.

  4. Remove pork, shred with forks, and discard bay leaves.

Crispy Finish (Optional but Best):

  • Preheat oven broiler.

  • Spread shredded pork on a baking sheet.

  • Spoon some cooking juices over the top.

  • Broil for 5–7 minutes until edges get crispy and caramelized. Toss and broil another few minutes if desired.


Serving Ideas:

  • Serve in warm corn tortillas with cilantro, diced onion, salsa, avocado, and lime wedges.

  • Use for burritos, nachos, quesadillas, or rice bowls.
