Easy Spinach Frittata

Ingredients:

  • 8 large eggs

  • ½ cup milk or cream

  • 1 cup fresh spinach (chopped, packed)

  • ½ cup shredded cheese (cheddar, mozzarella, feta, or parmesan)

  • 1 small onion, finely chopped (optional)

  • 1 clove garlic, minced (optional)

  • 1 tablespoon olive oil or butter

  • Salt & black pepper, to taste

  • Fresh herbs (parsley, dill, or chives), for garnish


Instructions:

  1. Preheat Oven

    • Preheat oven to 375°F (190°C).

  2. Cook the Veggies

    • Heat olive oil (or butter) in an oven-safe skillet over medium heat.

    • Sauté onion until soft (about 3 minutes). Add garlic and spinach, cooking until spinach is wilted.

  3. Mix Eggs

    • In a bowl, whisk together eggs, milk, salt, and pepper.

    • Stir in shredded cheese.

  4. Assemble Frittata

    • Pour egg mixture over the spinach in the skillet.

    • Stir gently to distribute evenly.

  5. Cook & Bake

    • Cook on the stovetop for 2–3 minutes until edges begin to set.

    • Transfer skillet to the oven and bake 12–15 minutes, until eggs are set and top is lightly golden.

  6. Serve

    • Let cool for 5 minutes before slicing.

    • Garnish with fresh herbs.

    • Serve warm or at room temperature with salad, toast, or roasted potatoes.
