Flaky Spinach Stuffed Pastry

Ingredients

  • 1 sheet puff pastry (thawed if frozen)

  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 5 oz fresh spinach (or frozen, thawed and drained)

  • ½ cup ricotta cheese

  • ¼ cup feta cheese, crumbled

  • 1 egg, beaten (for egg wash)

  • Salt & black pepper, to taste

  • Pinch of nutmeg (optional)


Instructions

  1. Prepare the filling:

    • Heat olive oil in a skillet over medium heat.

    • Sauté onions until translucent, then add garlic and cook 1 minute.

    • Add spinach and cook until wilted. Remove from heat and let cool slightly.

    • Stir in ricotta, feta, salt, pepper, and nutmeg. Mix until combined.

  2. Assemble the pastries:

    • Preheat oven to 400°F (200°C).

    • Roll out puff pastry and cut into squares (about 4×4 inches).

    • Place a spoonful of spinach filling in the center of each square.

    • Fold over to form triangles or rectangles and seal edges by pressing with a fork.

    • Brush tops with beaten egg.

  3. Bake:

    • Place pastries on a parchment-lined baking sheet.

    • Bake for 18–22 minutes or until golden brown and puffed.

  4. Serve:

    • Enjoy warm as an appetizer, snack, or light meal.
