French Onion Beef and Noodles

Ingredients
• 1 lb beef stew meat or thinly sliced sirloin
• 2 tbsp olive oil
• 1 large onion, thinly sliced
• 3 cloves garlic, minced
• 1 packet onion soup mix
• 3 cups beef broth
• 1 tbsp Worcestershire sauce
• 1 tsp dried thyme
• 10 oz egg noodles
• 1 cup shredded Mozzarella or Gruyère cheese
• Salt + black pepper to taste
• Optional: chopped parsley for serving

Instructions

  1. Heat olive oil in a large skillet or pot. Sear the beef pieces until browned on all sides. Remove and keep them close, they’ll be back.

  2. Toss onions into the same pot. Cook until golden and soft, scraping up the tasty bits from the bottom. Garlic joins the party at the end, just 30 seconds.

  3. Stir in onion soup mix, beef broth, Worcestershire, and thyme. Return the beef. Simmer about 20 minutes until tender and flavorful.

  4. Add egg noodles right into the pot. Let them cook in the broth until soft and happy, usually 8–10 minutes.

  5. When the noodles are ready, stir in the cheese so everything melts together into creamy deliciousness.

  6. Taste, season with a little more salt and pepper if needed. Plate it up and maybe a sprinkle of parsley.
