French Onion Ground Beef and Tortellini Skillet

Ingredients
• 1 lb ground beef
• 2 tbsp butter
• 2 large onions, thinly sliced
• 3 garlic cloves, minced
• 1 tsp thyme (dried or fresh)
• 1/2 tsp black pepper
• 1 tsp salt
• 4 cups beef broth
• 1 (20 oz) package cheese tortellini (fresh or refrigerated)
• 1 cup shredded Swiss or mozzarella cheese
• Optional: fresh parsley for garnish

Instructions

  1. In a large skillet, brown ground beef over medium heat. Remove and set aside.

  2. In the same skillet, melt butter and sauté onions over medium-low heat until caramelized, about 15 minutes. Stir in garlic, thyme, salt, and pepper.

  3. Return beef to the skillet and pour in beef broth. Bring to a simmer.

  4. Add tortellini and cook according to package instructions, stirring occasionally, until tender.

  5. Sprinkle shredded cheese over the top and cover briefly until melted.

  6. Garnish with fresh parsley and serve warm.
