Ingredients
For the Cheesecake Filling:
8 oz cream cheese, softened
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
1/2 cup fresh strawberries, finely chopped (or strawberry jam for a quicker version)
For the Sandwiches:
8 slices white sandwich bread (soft and squishy works best)
1–2 tablespoons strawberry jam (optional – for layering)
2 eggs
1/4 cup milk
1 teaspoon cinnamon
1/4 cup granulated sugar (for coating)
Vegetable oil, for frying
Powdered sugar and extra strawberries for garnish (optional)
Instructions
1. Make the filling:

In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.

Fold in chopped strawberries (or swirl in a spoonful of jam if using).
2. Assemble the sandwiches:

Flatten each slice of bread with a rolling pin to make them easier to seal.

Spread a heaping tablespoon of cheesecake filling onto 4 slices of bread.

3. Dip & fry:

5. Coat in sugar:
