For the Cheesecake Filling:

8 oz cream cheese, softened

1/4 cup powdered sugar

1/2 teaspoon vanilla extract

1/2 cup fresh strawberries, finely chopped (or strawberry jam for a quicker version)

For the Sandwiches:

8 slices white sandwich bread (soft and squishy works best)

12 tablespoons strawberry jam (optional – for layering)

2 eggs

1/4 cup milk

1 teaspoon cinnamon

1/4 cup granulated sugar (for coating)

Vegetable oil, for frying

Powdered sugar and extra strawberries for garnish (optional)


Instructions

1. Make the filling:

  • In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.

  • Fold in chopped strawberries (or swirl in a spoonful of jam if using).

2. Assemble the sandwiches:

  • Flatten each slice of bread with a rolling pin to make them easier to seal.

  • Spread a heaping tablespoon of cheesecake filling onto 4 slices of bread.

  • Top with the remaining 4 slices to form sandwiches.

  • Gently press the edges together — you can even seal them with a fork like a hand pie.

3. Dip & fry:

  • In a shallow bowl, whisk together the eggs, milk, and cinnamon.

  • Dip each sandwich into the egg mixture, coating both sides.

4. Fry until golden:

  • Heat 1–2 inches of oil in a skillet over medium heat (about 350°F/175°C).

  • Fry the sandwiches 1–2 at a time for about 1–2 minutes per side, or until golden brown.

  • Transfer to paper towels to drain.

5. Coat in sugar:

  • While still warm, roll or sprinkle the sandwiches in granulated sugar for a cinnamon-toast crunch.

Notes

  • For a richer taste, use brioche or challah bread.

  • Want a shortcut? Use store-bought strawberry cream cheese.

  • You can air-fry these too — brush with butter and cook at 375°F for 4–5 minutes per side.
