Garlic Bread Bruschetta with Fresh Tomatoes

Ingredients

  • 1 French baguette or ciabatta loaf, sliced

  • 3–4 cloves garlic, minced

  • 3 tbsp olive oil (plus extra for drizzling)

  • 2 cups cherry or plum tomatoes, diced

  • ¼ cup fresh basil, chopped

  • Salt and black pepper, to taste

  • 1 tbsp balsamic glaze (optional)

  • 2 tbsp grated Parmesan (optional)


Instructions

  1. Prepare the Garlic Bread:

    • Preheat oven to 400°F (200°C).

    • Mix minced garlic with olive oil.

    • Brush mixture onto both sides of the bread slices.

    • Bake for 8–10 minutes, until golden and crisp.

  2. Prepare the Tomato Topping:

    • In a bowl, combine diced tomatoes, chopped basil, a drizzle of olive oil, salt, and pepper.

    • Optional: add balsamic glaze or Parmesan for extra flavor.

  3. Assemble the Bruschetta:

    • Spoon tomato mixture generously over each slice of garlic bread.

    • Drizzle with a little more olive oil or balsamic glaze if desired.

  4. Serve:

    • Serve immediately while the bread is warm and crispy.

    • Optional: garnish with extra fresh basil leaves.
