Garlic Bread Bruschetta with Fresh Tomatoes
Ingredients

1 French baguette or ciabatta loaf, sliced

3–4 cloves garlic, minced

3 tbsp olive oil (plus extra for drizzling)

2 cups cherry or plum tomatoes, diced

¼ cup fresh basil, chopped

Salt and black pepper, to taste

1 tbsp balsamic glaze (optional)

2 tbsp grated Parmesan (optional)
Instructions

Prepare the Garlic Bread:

Preheat oven to 400°F (200°C).

Mix minced garlic with olive oil.

Brush mixture onto both sides of the bread slices.

Bake for 8–10 minutes, until golden and crisp.

Prepare the Tomato Topping:

In a bowl, combine diced tomatoes, chopped basil, a drizzle of olive oil, salt, and pepper.

Optional: add balsamic glaze or Parmesan for extra flavor.

Assemble the Bruschetta:

Spoon tomato mixture generously over each slice of garlic bread.

Drizzle with a little more olive oil or balsamic glaze if desired.
