Garlic Butter Shrimp Scampi with Linguine

Ingredients:

12 oz (340g) linguine pasta

1 lb (450g) large shrimp, peeled and deveined

Salt and pepper, to taste

3 tbsp unsalted butter

2 tbsp olive oil
-
4 cloves garlic, minced

¼ tsp red pepper flakes (optional, for a little heat)

Juice of 1 lemon

¼ cup chopped fresh parsley

Lemon slices, for garnish
Instructions:

Cook pasta: Cook linguine according to package directions until al dente. Drain and set aside, reserving ½ cup pasta water.

Cook shrimp: Season shrimp with salt and pepper. In a large skillet, melt 2 tbsp butter with olive oil over medium-high heat. Add shrimp and cook 2–3 minutes per side until pink and opaque. Remove shrimp and set aside.

Make scampi sauce: In the same skillet, add remaining 1 tbsp butter and garlic (and red pepper flakes if using). Sauté 1–2 minutes until fragrant.and lemon juice; simmer 2–3 minutes to reduce slightly.

Combine: Return shrimp to skillet, toss to coat in sauce. Add cooked linguine and toss to combine, adding reserved pasta water as needed to loosen sauce.

Serve: Sprinkle with fresh parsley and garnish with lemon slices. Serve immediately.
