Garlic Butter Shrimp Scampi with Linguine

Servings: 4 | Prep Time: 10 min | Cook Time: 15 min | Calories: ~520 per serving

Ingredients:

  • 12 oz (340g) linguine pasta

  • 1 lb (450g) large shrimp, peeled and deveined

  • Salt and pepper, to taste

  • 3 tbsp unsalted butter

  • 2 tbsp olive oil

  • 4 cloves garlic, minced

  • ¼ tsp red pepper flakes (optional, for a little heat)

  • Juice of 1 lemon

  • ¼ cup chopped fresh parsley

  • Lemon slices, for garnish

Instructions:

  1. Cook pasta: Cook linguine according to package directions until al dente. Drain and set aside, reserving ½ cup pasta water.

  2. Cook shrimp: Season shrimp with salt and pepper. In a large skillet, melt 2 tbsp butter with olive oil over medium-high heat. Add shrimp and cook 2–3 minutes per side until pink and opaque. Remove shrimp and set aside.

  3. Make scampi sauce: In the same skillet, add remaining 1 tbsp butter and garlic (and red pepper flakes if using). Sauté 1–2 minutes until fragrant.and lemon juice; simmer 2–3 minutes to reduce slightly.

  4. Combine: Return shrimp to skillet, toss to coat in sauce. Add cooked linguine and toss to combine, adding reserved pasta water as needed to loosen sauce.

  5. Serve: Sprinkle with fresh parsley and garnish with lemon slices. Serve immediately.
