Garlic Butter Steak Bites with Parmesan Potatoes
Ingredients:
For the Steak Bites:

1.5 lb sirloin or ribeye steak, cut into bite-sized cubes

2 tbsp olive oil

Salt and pepper, to taste

4 cloves garlic, minced
-
3 tbsp butter
-
1 tsp fresh thyme or rosemary (optional)
For the Parmesan Potatoes:

1.5 lb baby potatoes, halved
-
2 tbsp olive oil
-
½ tsp garlic powder
-
Salt and pepper, to taste

¼ cup grated Parmesan cheese
-
2 tbsp chopped parsley (for garnish)
Instructions:

Cook the Potatoes:

Preheat oven to 400°F (200°C).

Toss halved potatoes with olive oil, garlic powder, salt, and pepper.

Roast for 20–25 minutes, flipping halfway, until golden and crispy.

Sprinkle with Parmesan cheese and return to oven for 5 more minutes.

Cook the Steak Bites:

Heat olive oil in a large skillet over high heat.
-
Season steak cubes with salt and pepper.
-
Sear steak bites for 2–3 minutes per side, until browned. Remove and set aside.

Make Garlic Butter Sauce:

In the same skillet, reduce heat to medium. Melt butter and add minced garlic and thyme/rosemary.

Cook for 30 seconds until fragrant.

Toss steak bites back in the skillet, coating them in garlic butter.

Serve:

Plate steak bites with Parmesan potatoes on the side.

Garnish with chopped parsley and extra Parmesan if desired.

Optional: drizzle a little garlic butter over potatoes for maximum indulgence.
