Garlic Butter Steak Bites with Parmesan Potatoes

Ingredients:

For the Steak Bites:

  • 1.5 lb sirloin or ribeye steak, cut into bite-sized cubes

  • 2 tbsp olive oil

  • Salt and pepper, to taste

  • 4 cloves garlic, minced

  • 3 tbsp butter

  • 1 tsp fresh thyme or rosemary (optional)

For the Parmesan Potatoes:

  • 1.5 lb baby potatoes, halved

  • 2 tbsp olive oil

  • ½ tsp garlic powder

  • Salt and pepper, to taste

  • ¼ cup grated Parmesan cheese

  • 2 tbsp chopped parsley (for garnish)


Instructions:

  1. Cook the Potatoes:

    • Preheat oven to 400°F (200°C).

    • Toss halved potatoes with olive oil, garlic powder, salt, and pepper.

    • Roast for 20–25 minutes, flipping halfway, until golden and crispy.

    • Sprinkle with Parmesan cheese and return to oven for 5 more minutes.

  2. Cook the Steak Bites:

    • Heat olive oil in a large skillet over high heat.

    • Season steak cubes with salt and pepper.

    • Sear steak bites for 2–3 minutes per side, until browned. Remove and set aside.

  3. Make Garlic Butter Sauce:

    • In the same skillet, reduce heat to medium. Melt butter and add minced garlic and thyme/rosemary.

    • Cook for 30 seconds until fragrant.

    • Toss steak bites back in the skillet, coating them in garlic butter.

  4. Serve:

    • Plate steak bites with Parmesan potatoes on the side.

    • Garnish with chopped parsley and extra Parmesan if desired.

    • Optional: drizzle a little garlic butter over potatoes for maximum indulgence.
