Garlic Chicken Gnocchi Skillet
Ingredients
Chicken:

1½ lbs boneless, skinless chicken thighs

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika
-
½ teaspoon garlic powder
Gnocchi & Vegetables:
-
1 lb potato gnocchi
-
½ cup onion, diced
-
8 oz mushrooms, sliced
-
5 oz fresh spinach
-
1 cup cherry tomatoes, halved
-
6 cloves garlic, minced
Sauce:
-
5 tablespoons butter
-
1 cup chicken broth
-
1 cup heavy cream
-
1 cup shredded mozzarella cheese
-
¾ cup freshly grated Parmesan cheese
-
1 teaspoon Italian seasoning
-
2 tablespoons olive oil
Instructions
Prepare Chicken:
-
Season chicken thighs with salt, pepper, paprika, and garlic powder

Heat 2 tablespoons butter in a large skillet over medium-high heat

Cook chicken thighs 5-10 minutes per side until golden brown and cooked through

Transfer chicken to a plate and set aside
Cook Vegetables:
5. Melt remaining 3 tablespoons butter in the same skillet
6. Add minced garlic and Italian seasoning, sauté for 30 seconds
7. Add diced onion and mushrooms, cook 3-4 minutes until onion is translucent
8. Add cherry tomatoes and cook for 3 minutes
9. Add spinach and stir until wilted
Make Sauce:
10. Pour in chicken broth and whisk for 1 minute until hot
11. Gradually add heavy cream, whisking continuously
12. Add mozzarella cheese and whisk 2-3 minutes until melted and thickening
13. Stir in grated Parmesan cheese until smooth
Final Assembly:
14. Add cooked gnocchi to the skillet and stir to coat with sauce
15. Nestle chicken thighs back into the skillet
16. Simmer 2 minutes to heat chicken through
17. Adjust seasoning with additional salt and pepper to taste
18. Serve immediately while hot
