Garlic Herb Butter Roasted Beef Tenderloin

Ingredients:

  • 2–3 lb beef tenderloin, trimmed

  • 4 tbsp butter, softened

  • 4 cloves garlic, minced

  • 1 tsp fresh rosemary, chopped

  • 1 tsp fresh thyme, chopped

  • 1 tsp fresh parsley, chopped

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tbsp olive oil

Instructions:

  1. Preheat oven to 425°F (220°C).

  2. In a small bowl, mix softened butter, garlic, rosemary, thyme, parsley, salt, and pepper.

  3. Rub the garlic herb butter evenly over the beef tenderloin.

  4. Heat olive oil in a skillet over medium-high heat. Sear the tenderloin on all sides until browned (about 2–3 minutes per side).

  5. Transfer the tenderloin to a roasting pan and roast in the preheated oven for 20–25 minutes for medium-rare, or until desired doneness.

  6. Remove from oven and let rest for 10 minutes before slicing.

  7. Serve with pan juices or additional garlic herb butter.
