Garlic Herb Butter Steak Bites with Crispy Smashed Brussels Sprouts

Ingredients

Steak Bites

  • 1½ lbs sirloin or ribeye steak, cut into bite-size cubes

  • 1 tablespoon olive oil

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon smoked paprika

  • 4 tablespoons butter

  • 4 cloves garlic, minced

  • 1 tablespoon fresh parsley, chopped

  • 1 teaspoon fresh thyme or rosemary, chopped

Crispy Smashed Brussels Sprouts

  • 1 lb Brussels sprouts

  • 2 tablespoons olive oil

  • ½ teaspoon garlic powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • Optional: grated Parmesan cheese


Instructions

Brussels Sprouts

  1. Preheat oven to 425°F (220°C).

  2. Boil Brussels sprouts in salted water for 12–15 minutes until fork-tender. Drain well.

  3. Place sprouts on a baking sheet, gently smash each with the bottom of a glass.

  4. Drizzle with olive oil and season with garlic powder, salt, and pepper.

  5. Roast for 20–25 minutes, flipping once, until crispy and golden.

  6. Sprinkle with Parmesan during the last 5 minutes if desired.

Steak Bites

  1. Pat steak dry and season with salt, pepper, and smoked paprika.

  2. Heat olive oil in a large skillet over medium-high heat.

  3. Sear steak bites in batches for 2–3 minutes per side until browned. Remove and set aside.

  4. Lower heat to medium. Add butter and garlic to the skillet and cook for 30 seconds.

  5. Return steak to the pan, toss in garlic butter, and add herbs.

  6. Cook 1 more minute, then remove from heat.
