Description
Ingredients
-
4-6 catfish fillets (6 oz each)
-
¼ cup extra-virgin olive oil
-
2-3 cloves garlic, minced
-
2 tablespoons fresh parsley, chopped
-
1 large lemon (juiced, plus wedges for serving)
-
2 tablespoons butter, melted
-
1 teaspoon salt
-
½ teaspoon black pepper
-
½ teaspoon garlic powder
-
½ teaspoon dried thyme
-
¼ teaspoon paprika (optional)
Instructions
Prepare the Fish
Preheat oven to 425°F and line a baking sheet with foil for easy cleanup. Pat catfish fillets completely dry with paper towels and place on the prepared baking sheet. Season both sides of fillets generously with salt and pepper.
Make the Garlic Lemon Mixture
In a small bowl, combine olive oil, minced garlic, chopped parsley, and thyme. In a separate small bowl, mix melted butter, fresh lemon juice, and garlic powder until well combined.
Season and Bake
Drizzle the olive oil and garlic mixture evenly over the catfish fillets, making sure each piece is well coated. Follow with the butter and lemon juice mixture, ensuring the fish is thoroughly covered with the aromatic blend. Sprinkle with paprika if desired for extra color and flavor.
Bake for 15-20 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F. The fillets should be golden on top and cooked through.
Serving
Serve immediately while hot, garnished with additional fresh chopped parsley and lemon wedges on the side. This dish pairs beautifully with garlic mashed potatoes, rice, or roasted vegetables, allowing the bright lemon and garlic flavors to complement your meal perfectly. The total cooking time is under 30 minutes, making it an ideal choice for a quick yet elegant dinner.
