Garlic Parmesan Chicken Noodle Soup

Ingredients

  • 1 lb chicken breast, cooked & shredded (or use rotisserie)

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 4–5 cloves garlic, minced

  • 2 large carrots, sliced

  • 2 celery stalks, sliced

  • 8 cups chicken broth

  • 1 tsp Italian seasoning

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp black pepper

  • ½ tsp paprika

  • Salt to taste

  • 2 cups egg noodles or rotini pasta

  • 1 cup heavy cream

  • 1 cup freshly grated Parmesan cheese

  • 1 cup spinach (optional)

  • Fresh parsley for garnish


Instructions

  1. Sauté aromatics:
    In a large pot, heat butter and olive oil. Add onion, carrots, and celery. Cook until softened. Add garlic and cook 1 minute.

  2. Build the broth:
    Pour in chicken broth and add Italian seasoning, garlic powder, onion powder, paprika, salt, and pepper.

  3. Add noodles + chicken:
    Bring to a boil. Add noodles and cook until tender. Stir in shredded chicken.

  4. Make it creamy:
    Reduce heat. Add heavy cream and Parmesan. Stir until melted and smooth.

  5. Finish:
    Stir in spinach until wilted (optional). Taste and adjust seasoning.

  6. Serve:
    Ladle into bowls, garnish with parsley and extra Parmesan.
