Garlic Parmesan Chicken Noodle Soup

Ingredients

1 lb chicken breast, cooked & shredded (or use rotisserie)

2 tbsp butter

1 tbsp olive oil

1 small onion, diced

4–5 cloves garlic, minced

2 large carrots, sliced
-
2 celery stalks, sliced
-
8 cups chicken broth
-
1 tsp Italian seasoning
-
1 tsp garlic powder
-
½ tsp onion powder
-
½ tsp black pepper
-
½ tsp paprika
-
Salt to taste

2 cups egg noodles or rotini pasta

1 cup heavy cream
-
1 cup freshly grated Parmesan cheese

1 cup spinach (optional)

Fresh parsley for garnish
Instructions

Sauté aromatics:
In a large pot, heat butter and olive oil. Add onion, carrots, and celery. Cook until softened. Add garlic and cook 1 minute. -
Build the broth:
Pour in chicken broth and add Italian seasoning, garlic powder, onion powder, paprika, salt, and pepper. -
Add noodles + chicken:
Bring to a boil. Add noodles and cook until tender. Stir in shredded chicken. -
Make it creamy:
Reduce heat. Add heavy cream and Parmesan. Stir until melted and smooth. -
Finish:
Stir in spinach until wilted (optional). Taste and adjust seasoning. -
Serve:
Ladle into bowls, garnish with parsley and extra Parmesan.
