Garlic Parmesan Whipped Feta Flatbread Pizzas

Ingredients (serves 4):

  • 2 flatbreads (store-bought or homemade)

  • 1 cup feta cheese

  • 2 oz cream cheese, softened

  • 2 cloves roasted garlic (or 1 clove raw garlic, minced)

  • 2 tbsp grated Parmesan cheese

  • 1 tbsp olive oil

  • 1 tsp dried oregano

  • 1 tsp fresh thyme or parsley, chopped

  • Freshly cracked black pepper, to taste

  • Optional toppings: cherry tomatoes, red pepper flakes, arugula

Instructions:

  1. Preheat oven: Preheat oven to 400°F (200°C). Place flatbreads on a baking sheet.

  2. Prepare whipped feta: In a food processor or blender, combine feta, cream cheese, roasted garlic, and olive oil. Blend until smooth and creamy.

  3. Assemble pizzas: Spread a generous layer of the whipped feta mixture over each flatbread. Sprinkle Parmesan evenly on top, and add oregano and a pinch of black pepper. Add optional toppings if desired.

  4. Bake: Bake flatbreads in the preheated oven for 8–12 minutes, or until edges are golden and crispy.

  5. Finish and serve: Remove from oven and garnish with fresh herbs. Slice and serve warm.

Calories: ~280 kcal per flatbread (without optional toppings)

Notes:

  • Roasting garlic beforehand adds a sweet, mellow flavor; raw garlic can be used for a stronger bite.

  • Can be made ahead: whip the feta and store in the fridge for up to 3 days. Assemble and bake just before serving.

  • Experiment with toppings like roasted red peppers, caramelized onions, or spinach for variety.
