Grandma Neva’s Cheesy Cabbage Casserole
Ingredients

1 medium head green cabbage, chopped

1 medium onion, diced

2 tbsp butter
-
1 can (10.5 oz) cream of chicken soup

1 cup sour cream
-
1 tsp garlic powder
-
1 tsp onion powder
-
½ tsp smoked paprika (optional)

Salt & black pepper to taste

2 cups shredded cheddar cheese, divided

1 cup crushed Ritz crackers or buttery breadcrumbs

2 tbsp melted butter (for topping)
Instructions

Prep the cabbage:
Bring a large pot of salted water to a boil. Add chopped cabbage and cook 5–7 minutes until tender. Drain well. -
Sauté onions:
In a skillet, melt 2 tbsp butter over medium heat. Add diced onion and cook until soft and lightly golden. -
Mix the creamy filling:
In a large bowl, combine cream of chicken soup, sour cream, garlic powder, onion powder, smoked paprika, salt, and pepper.
Stir in sautéed onions and 1½ cups cheddar cheese. -
Combine:
Add the drained cabbage and mix until everything is coated in the creamy cheesy mixture. -
Assemble:
Spread into a greased 9×13 baking dish.
Top with remaining ½ cup cheddar cheese. -
Add topping:
Mix crushed Ritz crackers with melted butter and sprinkle evenly over the casserole. -
Bake:
Bake at 350°F (175°C) for 35–40 minutes, until bubbly and golden brown on top.
