Grandma Neva’s Cheesy Cabbage Casserole

Ingredients

  • 1 medium head green cabbage, chopped

  • 1 medium onion, diced

  • 2 tbsp butter

  • 1 can (10.5 oz) cream of chicken soup

  • 1 cup sour cream

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp smoked paprika (optional)

  • Salt & black pepper to taste

  • 2 cups shredded cheddar cheese, divided

  • 1 cup crushed Ritz crackers or buttery breadcrumbs

  • 2 tbsp melted butter (for topping)


Instructions

  1. Prep the cabbage:
    Bring a large pot of salted water to a boil. Add chopped cabbage and cook 5–7 minutes until tender. Drain well.

  2. Sauté onions:
    In a skillet, melt 2 tbsp butter over medium heat. Add diced onion and cook until soft and lightly golden.

  3. Mix the creamy filling:
    In a large bowl, combine cream of chicken soup, sour cream, garlic powder, onion powder, smoked paprika, salt, and pepper.
    Stir in sautéed onions and 1½ cups cheddar cheese.

  4. Combine:
    Add the drained cabbage and mix until everything is coated in the creamy cheesy mixture.

  5. Assemble:
    Spread into a greased 9×13 baking dish.
    Top with remaining ½ cup cheddar cheese.

  6. Add topping:
    Mix crushed Ritz crackers with melted butter and sprinkle evenly over the casserole.

  7. Bake:
    Bake at 350°F (175°C) for 35–40 minutes, until bubbly and golden brown on top.
