Greek Chicken Gyros

Ingredients:

For the Chicken Marinade:

  • 1½ lbs boneless, skinless chicken thighs or breasts

  • 3 tablespoons olive oil

  • 3 tablespoons plain Greek yogurt

  • 2 tablespoons lemon juice

  • 3 garlic cloves, minced

  • 1½ teaspoons dried oregano

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon paprika

For the Tzatziki Sauce:

  • 1 cup Greek yogurt

  • ½ cucumber, grated and drained

  • 1 tablespoon olive oil

  • 1 tablespoon lemon juice

  • 1 garlic clove, minced

  • 1 tablespoon fresh dill or mint, chopped

  • Salt and pepper to taste

For the Gyros:

  • 4–6 pita breads or flatbreads

  • Sliced tomatoes

  • Sliced red onions

  • Shredded lettuce or arugula

  • Feta cheese (optional)


Instructions:

  1. Marinate the chicken:
    In a bowl, whisk together olive oil, yogurt, lemon juice, garlic, oregano, salt, pepper, and paprika.
    Add chicken and toss to coat. Marinate for at least 1 hour (overnight for best flavor).

  2. Cook the chicken:
    Grill or pan-sear chicken over medium-high heat for 5–6 minutes per side, until golden and fully cooked.
    Let rest a few minutes, then slice thinly.

  3. Make the tzatziki:
    In a bowl, mix yogurt, grated cucumber, olive oil, lemon juice, garlic, dill, salt, and pepper.
    Chill until ready to serve.

  4. Assemble the gyros:
    Warm pita bread.
    Spread tzatziki down the center, add sliced chicken, tomatoes, onions, and lettuce.
    Sprinkle feta on top if desired.

  5. Wrap & serve:
    Fold the pita, wrap in foil or parchment, and serve warm.
