Ingredients

1 lb ground beef
-
1 tbsp olive oil (if needed)

1 medium onion, diced
-
3 cloves garlic, minced
-
2 medium zucchinis, halved & sliced
-
1 red bell pepper, diced
-
1 can (14.5 oz) diced tomatoes (undrained)

1 tbsp tomato paste
-
1 tsp smoked paprika
-
1 tsp Italian seasoning
-
½ tsp chili powder (optional)
-
Salt & pepper, to taste

½ cup shredded mozzarella or cheddar (optional)

Fresh parsley or basil, for garnish
Instructions
1. Brown the Beef
Heat a skillet over medium-high.
Add ground beef and cook until browned, about 5–6 minutes.
Drain excess fat if needed.
2. Add Onion & Garlic
Add diced onion and sauté 2–3 minutes.
Add garlic and cook 1 minute more.
3. Add Veggies
Stir in:

Zucchini
-
Bell pepper
Cook 4–5 minutes until zucchini starts to soften.
4. Add Tomatoes & Seasoning
Add:
-
Diced tomatoes
-
Tomato paste
-
Smoked paprika
-
Italian seasoning
-
Chili powder
-
Salt & pepper
Stir and simmer 5–7 minutes until thick and saucy.
5. Optional: Add Cheese
Sprinkle mozzarella or cheddar over the top, cover, and let melt 1–2 minutes.
6. Serve
Garnish with fresh parsley or basil.
Serve alone, over rice, pasta, or stuffed into tortillas.
