Ingredients
For the Hamburger Steaks:
-
1 ½ pounds ground beef (85% lean recommended)
-
4 tablespoons frozen butter, shredded (optional)
-
½ cup yellow onion, very finely minced
-
2 teaspoons yellow mustard
-
3 teaspoons Worcestershire sauce
-
3 cloves garlic, minced
-
Salt and black pepper to taste
-
2 tablespoons olive oil (for cooking)
For the Onion Gravy:
-
2 yellow onions, sliced into ¾ inch strings
-
3 tablespoons cold unsalted butter, divided
-
1 cup chicken broth
-
1 cup beef broth
-
1 teaspoon onion powder
-
½ teaspoon garlic powder
-
1 ½ teaspoons Worcestershire sauce
-
¼ cup cold water
-
3 tablespoons cornstarch
Instructions
-
Prepare the hamburger steaks: In a large bowl, combine ground beef, shredded frozen butter, finely minced onion, yellow mustard, Worcestershire sauce, minced garlic, salt, and pepper. Mix gently until just combined. Form the meat into 4-6 patties.
-
Cook the steaks: Heat olive oil in a large skillet over medium-high heat. Add the patties and cook for 3-4 minutes on each side until browned. Remove the patties from the skillet and set aside.
-
Make the onion gravy: In the same skillet, add 2 tablespoons butter and the sliced onions. Cook over medium heat, stirring occasionally until onions are softened and caramelized, about 5-6 minutes.
-
Thicken the gravy: Add the remaining butter to the skillet, then sprinkle in cornstarch mixed with cold water. Stir to combine and cook for about 1 minute to eliminate floury taste. Gradually whisk in beef broth and chicken broth, then add Worcestershire sauce, onion powder, and garlic powder. Simmer and stir until gravy thickens, around 2-3 minutes.
-
Finish cooking steaks in gravy: Return hamburger steaks to the skillet, nestling them into the gravy. Reduce heat to low and simmer for 5-7 minutes until steaks are cooked through and flavors meld.
-
Serve: Spoon onion gravy and caramelized onions over the steaks and serve hot. Great served with mashed potatoes or rice.
This classic comfort dish is flavorful, hearty, and serves about 4-6 people.
