Healthier Homemade One-Pot Hamburger Helper

Ingredients

  • 1 lb (450 g) lean ground beef or turkey

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 1 bell pepper, diced (optional)

  • 1 cup whole wheat or chickpea pasta (elbow macaroni or shells)

  • 2 cups low-sodium beef or vegetable broth

  • 1 cup milk (dairy or plant-based)

  • 1 1/2 cups shredded cheddar cheese

  • 1 tsp paprika

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp black pepper

  • Salt to taste

  • Optional garnish: chopped parsley or green onions


Instructions

1. Brown the Meat

  1. In a large skillet or saucepan, cook ground beef over medium heat until browned. Drain excess fat.

  2. Add onion, garlic, and bell pepper. Sauté 3–4 minutes until softened.

2. Add Pasta & Liquids

  1. Stir in pasta, broth, milk, paprika, garlic powder, onion powder, salt, and pepper.

  2. Bring to a gentle boil, then reduce heat to low. Cover and simmer 12–15 minutes, stirring occasionally, until pasta is tender and liquid is mostly absorbed.

3. Add Cheese

  1. Stir in shredded cheddar until melted and creamy.

  2. Taste and adjust seasoning if needed.

4. Serve

  • Garnish with chopped parsley or green onions. Serve hot.
