🥗 Healthy Ranch Chicken Salad

Ingredients (Serves 4)

  • 2 cups cooked chicken breast, shredded or cubed (rotisserie works great)

  • ½ cup plain Greek yogurt (or use half yogurt + half light mayo for extra creaminess)

  • 2 tbsp ranch seasoning mix (store-bought or homemade)

  • 1 celery stalk, finely chopped

  • ½ red bell pepper, finely diced

  • ¼ cup red onion, finely diced

  • 2 tbsp fresh parsley or dill, chopped

  • 1 tsp lemon juice (optional, for brightness)

  • Salt & black pepper, to taste


Instructions

  1. Mix the dressing

    • In a bowl, combine Greek yogurt, ranch seasoning, lemon juice, salt, and pepper. Adjust seasoning to taste.

  2. Assemble the salad

    • Add shredded chicken, celery, bell pepper, onion, and fresh herbs. Toss until well coated.

  3. Chill & serve

    • Refrigerate for at least 30 minutes to let the flavors meld.

    • Serve on whole-grain bread, in a wrap, or scooped into lettuce cups for a low-carb option.
