Honey Garlic Pork Chops with Roasted Vegetables

Ingredients

For the Pork Chops

  • 4 bone-in or boneless pork chops (about 1 inch thick)

  • 3 tbsp honey

  • 3 cloves garlic, minced

  • 2 tbsp soy sauce

  • 1 tbsp olive oil

  • Salt & black pepper, to taste

  • ½ tsp smoked paprika (optional)

For the Roasted Vegetables

  • 2 cups baby carrots

  • 1 cup broccoli florets

  • 1 cup bell pepper, chopped

  • 1 tbsp olive oil

  • Salt & black pepper, to taste

  • ½ tsp garlic powder


Instructions

  1. Preheat oven to 400°F (200°C).

  2. In a small bowl, whisk together honey, minced garlic, soy sauce, olive oil, salt, pepper, and smoked paprika.

  3. Place pork chops in a baking dish and brush both sides with the honey garlic mixture. Let marinate for 10–15 minutes if time allows.

  4. Toss vegetables with olive oil, salt, pepper, and garlic powder. Arrange around the pork chops in the baking dish.

  5. Bake for 25–30 minutes, or until pork chops reach an internal temperature of 145°F (63°C) and vegetables are tender.

  6. Optional: Broil for 2–3 minutes for a caramelized finish.

  7. Serve hot with the roasted vegetables and drizzle any pan juices over the pork chops.
