Honey-Glazed Pork Chops with Peach Salsa

Ingredients (4 servings)

For the pork chops:

  • 4 boneless pork chops (about 1-inch thick)

  • Salt and black pepper, to taste

  • 2 tbsp olive oil

  • ¼ cup honey

  • 2 tbsp Dijon mustard (optional, for tang)

  • 1 tsp garlic, minced

For the peach salsa:

  • 2 ripe peaches, peeled and diced

  • ½ red bell pepper, diced

  • ¼ small red onion, finely chopped

  • 1 small jalapeño, seeded and minced (optional, for heat)

  • 2 tbsp fresh cilantro, chopped

  • 1 tsp lime juice

  • Salt, to taste


Instructions

  1. Prep pork chops:
    Pat pork chops dry and season with salt and pepper.

  2. Cook pork chops:
    Heat olive oil in a skillet over medium-high heat. Sear pork chops 3–4 minutes per side until golden brown and cooked through (internal temp 145°F / 63°C). Remove from skillet and set aside.

  3. Make honey glaze:
    In the same skillet, reduce heat to medium. Add honey, Dijon mustard, and garlic. Stir for 1–2 minutes until slightly thickened and fragrant. Return pork chops to the skillet and coat with glaze.

  4. Make peach salsa:
    In a small bowl, combine diced peaches, bell pepper, red onion, jalapeño (if using), cilantro, lime juice, and a pinch of salt. Mix gently.

  5. Serve:
    Plate pork chops and spoon peach salsa on top. Drizzle extra honey glaze if desired. Serve with rice, roasted veggies, or a fresh salad.
