Honey Mustard Chicken Bowls

Ingredients

  • 1 ½ lbs chicken breasts or thighs, cut into bite-sized pieces

  • Salt and pepper, to taste

  • 2 tbsp olive oil

  • ½ cup honey

  • ¼ cup Dijon mustard (or yellow mustard)

  • 2 tbsp soy sauce

  • 1 tsp garlic powder

  • 1 tsp smoked paprika (optional)

  • 2 cups cooked rice or quinoa

  • 1–2 cups steamed or roasted vegetables (broccoli, carrots, bell peppers, etc.)

  • Fresh parsley or green onions, for garnish


Instructions

1. Cook the Chicken

Season chicken with salt, pepper, garlic powder, and smoked paprika.
Heat olive oil in a skillet over medium-high heat.
Cook chicken 6–8 minutes, stirring occasionally, until golden brown and cooked through.

2. Make the Honey Mustard Sauce

In a small bowl, whisk together honey, Dijon mustard, and soy sauce.
Pour sauce over cooked chicken and stir to coat. Simmer 2–3 minutes until glossy and slightly thickened.

3. Assemble the Bowls

Divide cooked rice or quinoa into bowls.
Top with honey mustard chicken and vegetables.
Drizzle with any extra sauce from the skillet.
Garnish with parsley or green onions.
