Instant Pot Greek Beef Stifado
Ingredients
• 2 lbs beef stew meat, cubed
• 2 tbsp olive oil
• 2 large onions, peeled and cut into wedges
• 4 garlic cloves, minced
• 1 (14 oz) can diced tomatoes
• 2 tbsp tomato paste
• 2 tsp cinnamon
• 1 tsp allspice
• 2 bay leaves
• 1 tsp salt
• 1/2 tsp black pepper
• Optional: fresh parsley for garnish
Instructions

Set Instant Pot to sauté mode. Heat olive oil and brown beef in batches. Remove and set aside.

Add onions and garlic to the pot. Sauté 3–4 minutes until fragrant.

Return beef to the pot. Stir in diced tomatoes, tomato paste, cinnamon, allspice, bay leaves, salt, and pepper.

Close lid, set valve to sealing, and cook on high pressure for 35 minutes.

Let pressure release naturally for 10 minutes, then quick release any remaining pressure.

Taste and adjust seasoning. Garnish with fresh parsley before serving.
