Jerk Shrimp Tacos with Pineapple Salsa
Ingredients
For the Jerk Shrimp:

1 pound large shrimp, peeled and deveined

2 tablespoons jerk seasoning

1 tablespoon olive oil

1 lime, juiced

1 teaspoon soy sauce

1 clove garlic, minced

Salt and pepper to taste
For the Pineapple Salsa:

2 cups fresh pineapple, diced into small cubes

1/2 cup red onion, finely diced

1/2 cup fresh cilantro, chopped

1 jalapeño pepper, seeded and finely chopped

1/2 cup mixed bell peppers, seeded and finely chopped

1 lime, juiced

Pinch of salt

2 green onions, finely sliced
For Assembly:

12 small corn tortillas, warmed

2 cups cabbage, thinly sliced

1 avocado, sliced

Lime wedges for serving
Instructions
Prepare the Jerk Shrimp:

In a bowl, combine jerk seasoning, olive oil, lime juice, soy sauce, minced garlic, salt, and pepper

Add shrimp to the marinade and toss to coat evenly

Let marinate for at least 20 minutes in the refrigerator

Heat a skillet over medium-high heat and cook shrimp for 2-3 minutes per side until pink and cooked through
Make the Pineapple Salsa:

Combine diced pineapple, red onion, cilantro, jalapeño, bell peppers, and green onions in a bowl

Add lime juice and a pinch of salt

Assemble the Tacos:
