Lamb Burgers With Feta

Ingredients

For the Lamb Burgers:

  • 1 pound ground lamb

  • 1 cup feta cheese crumbles

  • 1/4 cup fresh flat-leaf parsley, finely chopped

  • 10 fresh mint leaves, chopped

  • 6 fresh basil leaves, chopped

  • 4 garlic cloves, minced

  • 1 teaspoon dried oregano

  • 1/2 teaspoon salt

  • 1/2 teaspoon cracked black pepper

  • 1/4 teaspoon cumin

  • Zest of 1 lemon

Optional Add-ins:

  • 1/4 cup chopped kalamata olives

  • 1/3 cup chopped sun-dried tomatoes

  • 1 cup packed baby spinach, chopped

For Serving:

  • 4 burger buns or pita bread

  • Baby arugula or lettuce

  • Sliced tomatoes

  • Cucumber slices

  • Greek yogurt or tzatziki sauce

Instructions

Prepare the Burger Mix:

  1. In a food processor, pulse the fresh herbs, garlic cloves, and lemon zest until finely chopped

  2. In a large bowl, combine ground lamb with the herb mixture, oregano, cumin, salt, and pepper

  3. Gently fold in the feta cheese crumbles and any optional add-ins

  4. Mix gently with your hands until just combined – avoid overmixing to keep burgers tender

Form the Patties:

  1. Divide the mixture into 4 equal portions

  2. Gently form into patties about 1 inch thick

  3. Make a slight depression in the center of each patty for even cooking

  4. Let patties rest for 10-15 minutes to firm up

Cook the Burgers:

  1. Heat a grill, grill pan, or skillet over medium-high heat

  2. Lightly oil the cooking surface to prevent sticking

  3. Cook burgers for 4-5 minutes on the first side until golden brown

  4. Flip and cook for another 4-5 minutes for medium doneness

  5. Internal temperature should reach 160°F for fully cooked lamb

  6. Let burgers rest for 5 minutes after cooking

Assembly and Serving:

  1. Lightly toast the burger buns

  2. Spread Greek yogurt or tzatziki on the bottom bun

  3. Add the lamb burger, then top with arugula, tomato slices, and cucumber

  4. Add the top bun and serve immediately
