Loaded Broccoli Cheddar Potato Casserole

Ingredients:

  • 6 medium russet potatoes, peeled and diced

  • 2 cups broccoli florets (fresh or frozen)

  • 4 tbsp butter

  • ½ cup sour cream

  • ½ cup milk (or heavy cream for richer flavor)

  • 2 cups shredded cheddar cheese (divided)

  • 4 slices cooked bacon, crumbled

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Salt and black pepper, to taste

  • 2 green onions, chopped (for garnish)

Instructions:

  1. Cook the Potatoes:
    Boil diced potatoes in salted water until fork-tender (about 10–12 minutes). Drain well.

  2. Steam the Broccoli:
    Steam or microwave broccoli until just tender, then roughly chop.

  3. Mash and Mix:
    In a large bowl, mash potatoes with butter, sour cream, milk, garlic powder, onion powder, salt, and pepper until creamy.
    Stir in broccoli, 1 ½ cups of shredded cheddar, and half the crumbled bacon.

  4. Assemble the Casserole:
    Spoon the mixture into a greased 9×13-inch baking dish.
    Top with remaining cheddar cheese and bacon.

  5. Bake:
    Bake at 375°F (190°C) for 20–25 minutes, or until cheese is melted and bubbly.

  6. Serve:
    Let cool slightly, then garnish with chopped green onions before serving.
