Ingredients

6 cups diced potatoes (fresh or frozen diced hash browns)

8 slices bacon, cooked and crumbled

2 cups shredded cheddar cheese

1 cup shredded mozzarella (optional but extra cheesy)

1 cup sour cream

1 cup heavy cream or milk
-
½ cup butter, melted
-
1 packet ranch seasoning mix (or 2 tbsp homemade)

1 tsp garlic powder
-
1 tsp onion powder
-
½ tsp paprika
-
1 tsp salt (adjust to taste)

1 tsp black pepper

½ cup green onions, sliced

Extra cheddar for topping
Instructions

Preheat oven to 375°F (190°C).

In a large bowl, combine potatoes, half the bacon, cheddar, mozzarella, sour cream, heavy cream, and melted butter.

Add ranch seasoning, garlic powder, onion powder, paprika, salt, and black pepper. Mix very well.

Fold in green onions.

Transfer mixture to a greased 9×13 baking dish.

Top with extra cheddar cheese and remaining bacon.

Bake for 35–40 minutes, until hot, bubbly, and golden on top.
