Ingredients

For the Sandwich

  • 8 ounces cooked lobster meat, roughly chopped into bite-sized pieces

  • 4 slices good quality sourdough bread

  • 3 ounces sharp white cheddar cheese, sliced

  • 2 ounces Havarti or Gruyère cheese, shredded

  • 4 tablespoons unsalted butter, softened

  • ⅛ teaspoon Old Bay seasoning

  • Fresh cracked black pepper

For the Lemon Mayo (Optional)

  • 2 tablespoons mayonnaise

  • 2 teaspoons fresh lemon juice

  • 2 teaspoons lemon zest

  • 2 teaspoons fresh chives, chopped

  • Freshly cracked pepper

Instructions

Prepare the Components

If making the lemon mayo, whisk together mayonnaise, lemon juice, lemon zest, chives, and pepper in a small bowl. Season the chopped lobster meat with Old Bay seasoning and black pepper, mixing gently to avoid breaking up the pieces.

Assemble the Sandwiches

Butter one side of each bread slice generously. If using the lemon mayo, spread a thin layer on the unbuttered side of the bread. Place two slices butter-side down in a large skillet and layer with half the cheese, followed by the seasoned lobster meat, then the remaining cheese. Top with the remaining bread slices, butter-side up.

Cook to Perfection

Heat the skillet over medium heat and cook the sandwiches for 4-5 minutes until the bottom is golden brown. To help the cheese melt evenly, cover the skillet loosely with aluminum foil. Carefully flip the sandwiches and cook for another 3-4 minutes until the second side is golden brown and the cheese is fully melted.
