Maple Brown Sugar Glazed Carrots

Ingredients:

  • 2 lbs carrots, peeled and cut into 2-inch pieces (or use baby carrots)

  • 3 tablespoons unsalted butter

  • 3 tablespoons brown sugar

  • 2 tablespoons pure maple syrup

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • Optional: a pinch of cinnamon or nutmeg for warmth

  • Fresh parsley, chopped (for garnish)


Instructions:

  1. Cook the carrots:
    Bring a large pot of salted water to a boil. Add the carrots and cook for 6–8 minutes, until tender but not mushy. Drain well.

  2. Make the glaze:
    In a large skillet over medium heat, melt the butter. Stir in the brown sugar, maple syrup, salt, and pepper. Cook for about 2–3 minutes, until the mixture is bubbly and slightly thickened.

  3. Glaze the carrots:
    Add the drained carrots to the skillet and toss to coat evenly in the glaze. Continue cooking for 3–4 minutes, stirring occasionally, until the carrots are glossy and caramelized.

  4. Serve:
    Transfer to a serving dish, spoon the glaze over the top, and garnish with chopped parsley.
