Maple Pecan Baked Oatmeal
Ingredients

2 cups old-fashioned oats

1 tsp baking powder

½ tsp salt

1 tsp cinnamon

½ tsp nutmeg

1 cup milk (dairy or non-dairy)

½ cup pure maple syrup

2 large eggs
-
3 tbsp melted butter or coconut oil

1 tsp vanilla extract
-
½ cup chopped pecans (plus extra for topping)

Optional: ½ cup raisins or dried cranberries
Instructions

Preheat oven to 350°F (175°C). Grease an 8×8 baking dish.

In a large bowl, mix oats, baking powder, salt, cinnamon, nutmeg, and pecans.

In another bowl, whisk milk, maple syrup, eggs, melted butter, and vanilla.

Pour wet ingredients over dry and stir until combined. Fold in optional dried fruit.

Pour mixture into prepared dish. Sprinkle extra pecans on top.

Bake 35–40 minutes, until set and golden on top.

Serve warm with extra maple syrup or a drizzle of cream.
