Mashed Turnips with Garlic & Herbs
Ingredients

2 lbs (900g) turnips, peeled and chopped

3 cloves garlic, peeled

2–3 tbsp butter (or olive oil for vegan)

¼ cup milk or cream (or plant-based milk)

1 tsp fresh thyme leaves (or ½ tsp dried thyme)

1 tsp fresh rosemary, finely chopped (optional)

Salt & pepper to taste

Fresh parsley, chopped, for garnish
Instructions

Boil turnips & garlic:
In a large pot, add chopped turnips and garlic. Cover with water, add a pinch of salt, and bring to a boil. Simmer 15–20 minutes until turnips are tender. -
Drain & mash:
Drain water and return turnips and garlic to the pot. Mash using a potato masher or hand mixer until smooth. -
Add butter & herbs:
Stir in butter, milk, thyme, and rosemary. Season with salt and pepper to taste. -
Serve:
Transfer to a serving dish and garnish with fresh parsley. Serve warm as a side to roasted meats, poultry, or a vegetarian main.
