Mashed Turnips with Garlic & Herbs

Ingredients

  • 2 lbs (900g) turnips, peeled and chopped

  • 3 cloves garlic, peeled

  • 2–3 tbsp butter (or olive oil for vegan)

  • ¼ cup milk or cream (or plant-based milk)

  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)

  • 1 tsp fresh rosemary, finely chopped (optional)

  • Salt & pepper to taste

  • Fresh parsley, chopped, for garnish


Instructions

  1. Boil turnips & garlic:
    In a large pot, add chopped turnips and garlic. Cover with water, add a pinch of salt, and bring to a boil. Simmer 15–20 minutes until turnips are tender.

  2. Drain & mash:
    Drain water and return turnips and garlic to the pot. Mash using a potato masher or hand mixer until smooth.

  3. Add butter & herbs:
    Stir in butter, milk, thyme, and rosemary. Season with salt and pepper to taste.

  4. Serve:
    Transfer to a serving dish and garnish with fresh parsley. Serve warm as a side to roasted meats, poultry, or a vegetarian main.
