Meatloaf Filled with Mashed Potatoes
Ingredients
Mashed Potato Filling
• 3 cups mashed potatoes (thick, not runny)
• ½ cup shredded cheddar cheese
• 2 tbsp butter
• Salt and pepper to taste
Meatloaf
• 2 lbs ground beef
• 1 cup breadcrumbs
• 1 egg
• 1 small onion, finely chopped
• 1 tbsp Worcestershire sauce
• 2 tbsp ketchup
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp salt
• ½ tsp black pepper
Topping
• ½ cup ketchup
• 2 tbsp brown sugar
• 1 tbsp mustard (optional)
Instructions

Preheat your oven to 375°F (190°C). Line a loaf pan with parchment or grease it very well.

Make the potatoes first. Stir in cheddar, butter, salt, and pepper. Let them cool a bit so they firm up.

In a bowl, mix ground beef, breadcrumbs, egg, onion, Worcestershire, ketchup, garlic powder, onion powder, salt, pepper.

Press half the meat mixture into the bottom of the loaf pan, pushing it slightly up the sides to create a “well.”

Spoon the mashed potatoes into the center, keeping it away from the edges.

Cover with the rest of the meat mixture and seal around the edges.

Mix topping and brush over the top of the meatloaf.

Bake 50–60 minutes until cooked through. Let rest 10 minutes before slicing so it stays together.
