Mediterranean Spinach and Feta Crisps

Ingredients

For the Crisps:

  • 1 cup fresh spinach, finely chopped

  • 1/2 cup crumbled feta cheese

  • 1/2 cup freshly grated Parmesan cheese

  • 1/2 cup shredded mozzarella cheese

  • 2 tablespoons all-purpose flour (or gluten-free flour)

  • 1 large egg

  • 1 teaspoon olive oil

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon dried dill

  • 1/8 teaspoon red pepper flakes (optional)

  • Salt and pepper to taste

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.

  2. Prepare mixture: In a large mixing bowl, combine chopped spinach, feta cheese, Parmesan cheese, mozzarella cheese, and flour. Add the egg, olive oil, garlic powder, oregano, dill, and red pepper flakes.

  3. Mix thoroughly: Stir all ingredients until well combined and the mixture holds together. Season with salt and pepper to taste.

  4. Form crisps: Using a small spoon, scoop portions of the mixture and shape into small round patties or balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.

  5. Flatten: Gently flatten each mound slightly to form round discs for even baking.

  6. Bake: Bake for 12-15 minutes, or until the edges are golden brown and the crisps are bubbly. For extra crispiness, flip them halfway through baking.

  7. Cool and serve: Remove from oven and let cool for 5 minutes before transferring to a serving plate. Serve warm as an appetizer or snack.
