Mediterranean Spinach and Feta Crisps
Ingredients
For the Crisps:

1 cup fresh spinach, finely chopped

1/2 cup crumbled feta cheese

1/2 cup freshly grated Parmesan cheese

1/2 cup shredded mozzarella cheese

2 tablespoons all-purpose flour (or gluten-free flour)

1 large egg

1 teaspoon olive oil

1/2 teaspoon garlic powder

1/2 teaspoon dried oregano

1/2 teaspoon dried dill

1/8 teaspoon red pepper flakes (optional)

Salt and pepper to taste
Instructions

Preheat oven: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.

Prepare mixture: In a large mixing bowl, combine chopped spinach, feta cheese, Parmesan cheese, mozzarella cheese, and flour. Add the egg, olive oil, garlic powder, oregano, dill, and red pepper flakes.

Mix thoroughly: Stir all ingredients until well combined and the mixture holds together. Season with salt and pepper to taste.

Form crisps: Using a small spoon, scoop portions of the mixture and shape into small round patties or balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.

Flatten: Gently flatten each mound slightly to form round discs for even baking.

Bake: Bake for 12-15 minutes, or until the edges are golden brown and the crisps are bubbly. For extra crispiness, flip them halfway through baking.

Cool and serve: Remove from oven and let cool for 5 minutes before transferring to a serving plate. Serve warm as an appetizer or snack.
